A cheesecake with cashews in it!
That’s a pretty special recipe.
And it’s actually quite delicious.
But, as it turns out, the recipe itself may have been a little less special than we thought.
It turns out that the ingredients you need to make a cashew-nut cheesecake aren’t so different from those you’ll find in many other cheesecakes.
Cashew nut cream and cashew sugar can be found in many of the cheesecake recipes on Pinterest, and there’s plenty of other vegan options as well.
But this recipe, which comes from this year’s New York City Vegan Cheese Festival, was a standout for me because of how easy it is to make.
I used my favorite vegan cheese for the crust (the Cashew-Nut Classic) and the cashews were roasted in a Dutch oven (the Chocolate Cashew Cheesecake).
And the whole thing was only 40 minutes to make!
