You can make cashews from your favourite berries, and make the best nectar out of them by mixing them with milk, eggs, cream and sugar, which you then grind up and throw into jars.
You can also add some sugar, but it doesn’t have to be as sweet as your favourite dessert.
You will need: Cashew nut cashews – cut into small pieces 1 tbsp oil, plus more for frying 3 cloves garlic, peeled and finely chopped (or use 2 tsp ground cumin or coriander) 3 tbsp coconut milk (or water) 1/2 cup sugar 2 tsp vanilla extract (or other nut-free sweetener of your choice) Heat the oil in a pan over medium-high heat.
Add the garlic and cook for a minute, then add the coconut milk, sugar, vanilla extract and the cashews and cook until the cashew paste has browned a little.
Stir well and then add in the casnuts, garlic and coconut milk.
Stir until everything is well combined.
Pour in the milk and bring to the boil, then reduce the heat and simmer for 15-20 minutes until the milk has thickened.
Drain the casroys and serve.
This recipe is good for two people, but will work well with a small group.
Recipe Notes: This recipe makes enough cashews to make 10 large nectar jars.
If you’re making it for a party, you can increase the quantity to make 12.
