Why I’ve been eating cashew nut flakes for so long

Growing up, I used to have to wear these little plastic containers full of Cashew Nuts in my lunch box.

I didn’t really know what I was eating, so I’d just fill the little plastic bag with nuts and then take them home and eat.

I’ve always been a fan of Cashews, and it just seemed like the perfect snack for those mornings when you just want a little crunchy, salty, and chewy goodness in your morning.

I used it for a long time, and finally, I decided to take a step back and actually eat something that’s not really on the grocery store shelf: Cashews.

Ingredients for Lemon Cashew Chip 2 cups of raw cashews 1 lemon (about 1/2 lemon) 1/2 cup of olive oil 1 tablespoon salt 1 teaspoon freshly ground black pepper 1 cup of fresh squeezed lemon juice 1 medium-sized avocado, peeled and chopped 1 handful of fresh basil leaves Directions Preheat oven to 375 degrees F. Spread out the cashew mixture on a baking sheet, and bake for 10 minutes. 

Remove from the oven, and let cool on the baking sheet for 10 more minutes.
